Mayonnaise

¼ cup             Cashews, raw, soaked in water

7 ozs               Tofu, extra firm

½ tsp              Salt

½ tsp              Tahini

4 tsp                Lemon juice

1½ tsp            Vinegar, white

1 tbsp             Dijon

2 tbsp             Vinegar, Apple cider

2 ½ tsp           Agave Nectar

2 tbsp             Water

1 tsp                Xanthan gum

  1. Soaking the cashews in water for a few hours will reduce blending time. If you are not using a Vitamix.
  2. Place all the ingredients in a Vitamix or other blender and process until smooth.
  3. Adjust taste
